河粉,又称沙河粉、粿条(通行臺湾、潮州、马来西亚及[[新加坡],为闽南语及潮州话用法),在新加坡当地英文按发声写作“KUE TEO”,俗作贵刁、鬼刁),是中国广东和东南亚一带常见的一种小吃主料,1860年左右源自广州沙河,因而得名。
河粉原料是大米,将米洗净后磨成粉,加水调制成糊状,上笼蒸制成片状,冷却后划成条状即成。手工制成的河粉色白,近来也有店家在其中加入各种蔬菜汁或者水果汁,制成五颜六色的河粉。河粉可以用蒸、炒、煮等多种方法烹调,其中最著名的就是乾炒牛河。亦有人加入鱼丸、牛丸等配料,加入上汤者称为湿牛河。近年来也有人参考西餐,摹仿甜品或者通心粉烹调。
